pandan pancakes filled with a stewed dessicated coconut and gula melaka mixture, served wirm with coconut ice cream and redcurrants for garnish


pancake mixture,
pandan water
filling mixture,
dessicated coconut
gula melaka
salt water
pandan leaf

coconut ice cream


make the pancakes and leave to rest

slowly stew the coconut with all the ingredients together, tie the pandan leaf into a knot and add to the mixture, allow to rest

spoon some of the mixture into the pancake and roll, continue with the mixture

slightly warm and serve with coconut ice cream and a berry garnish (use the berry garnish to cut through the sweetness of the pancake)
